Carrot and Tomato Soup

(Serves 2)

1/2 c almonds, chopped
3 med carrots
2 1/2 c stock
2 c tomato, chopped
3 Tbls tomato paste
1/2 tsp lemon rind
1 Tbls mustard
2 tsp coriander
pepper

Grate carrots into a pot. Add remaining ingredients and bring to a boil. Simmer for 10 minutes and serve.
